The welcome lunch is the entry into a world of local specialties that opens with guided tours and tastings at a local wine producer - guardian of the secrets of Lambrusco – a cheese factory specializing in the production of Parmigiano Reggiano and a company totally dedicated to the cult of the Traditional Balsamic Vinegar of Reggio Emilia. The grand finale is dedicated to the puff pastry, the heart of a local cooking lesson for those who want to learn every step of the preparation, from the mixture of eggs and flour to the rested pasta, ready to be cut out and take the form of tortellini, cappelletti, tagliatelle, tortelloni, maccheroncini al pettine.
