Piacenza is the only province throughout Europe to boast three PDO cured meats: Coppa, Pancetta and Salami PDO.
This is the reason it is the ideal setting for a dedicated course. It is called “Salumante” and it takes place in the medieval tavern of the Castle of Gropparello (www.castellodigropparello.it), in the middle of the extremely green Val Vezzeno. A three-hour course with a final tasting, to learn about every detail of Piacenza’s PDO cured meats, with experts of the sector who will recount their history, preparation and nutritional properties. They will also show tasters the sensorial qualities of cured meats, the connections to the territory, the slicing and serving techniques, to make them even more delicious. “Salumante” is an initiative with the collaboration between the Consorzio Salumi Dop Piacentini and the Castle of Gropparello. The scheduled days are: Sunday 24 June, 7 October and 11 November 2018. The price is 6 Euros per person.
